How do I ice a cake to make it look like a professional cake?

I want to learn how to make gorgeous cakes, and ultimately wedding cakes.

I have heard of fondant icing. I think you roll it out? How would I make it?

Tips and suggestions for layer cakes are much appreciated!

Everyone wants to do the fondant thing but that stuff tastes bland and boring. The only thing it brings to the party is an ultra smooth surface.
Look at taking a cake decorating class at your local adult education center or craft stores sometimes offer them. Check out any local bakeries and see if the owner/manager would be willing to take on an apprentice for nothing to teach you some basics to get you started. That is actually how several decorators at the bakery I work at started out.
There are also many on line videos to watch and also probably on line classes you can take for free to learn many tips and tricks but basically you need to just dive in and try.
Watch some videos or pick up a book and following the directions, make one of the cakes in there.
Wilton has TONS of booklets and information on line to help

before you frost your cake for real frost it with a thin layer, this is a crumb layer, it'll make the the frosting look a LOT better when you add a thick layer of frosting. when making a layered cake, after it's cooled cut a thin layer off the top to level it off and don't over fill your layers in between with filing/frosting. Fondant is ideal for making your cake look smooth it's basically a rolled dough.

    1 cup powdered sugar
    1 tbsp. butter or shortening
    1 tbsp. milk or water

Mix all ingredients together until very firm, then use a rolling pin, and roll the fondant out on wax paper, then put on cake when done.

Both being professional chefs, my wife and I started a bakery, with very little cake decorating experience. Point being, we both taught ourselves through practice. I could explain it to you over and over again, as others have tried to tell me, but you'll never learn any better way, than through practice. Make some extra icing and PRACTICE over and over again. Check out Youtube and search cake decorating. There are tons of great instructional videos on there. In the meatime check out our website, and see some of our work for yourself.
