How is mass important when building a water bottle rocket?

I need help for this, because Google and other search engines are not helping. The only thing I know is that mass is important because of gravity.

A greater mass means greater weight (force due to gravity) because weight is calculated as m*g which is mass x acceleration due to gravity. Also, a rocket with more mass will have less acceleration than a rocket with less mass under the same thrust. Less acceleration means less velocity and height that the rocket will reach.
